Once upon a time, I loved cooking, baking, and experimenting with recipes in the kitchen….
Ah, the good ole days, I tell ya! Of course, this was a time where I was a stay at home mom with two daughters, a 4 year old and a 6 month old. Looking back at that moment in my life, I pleasantly remember both of my girls sleeping through the night, and taking two hour naps during the day.
With all three of us well rested, I was able to get all the housework done in the morning, leaving the rest of the day free to do whatever we wanted- including going out to the park, visiting family, hanging out at the library, going out for dessert, and the list goes on.
I also had the luxury of spending as much time as I needed in the kitchen, trying out new recipes and experimenting with new ingredients while the girls would quietly play with each other in the nearby living room. That year was the first time I was able to take time out for myself and explore the world of cooking and baking (and I loved it!), as before that I worked full time, and before that I was a university student- both roles left me with very little time to do anything for myself.
Fast forward to about a year later, and my love of cooking and baking ran away from me and never came back…
So, what changed? The birth of my third child, that’s what! From the day my son was born, gone were the days of sleeping through the night and long naps during the day… and not to mention my sanity!
During the first few months after my son’s birth, I had very little sleep, and the last thing I wanted to do was cook dinner; instead, I was always torn between taking a nap, a shower, or making the house appear somewhat clean. And then the little munchkin started teething- NEED I SAY MORE!
Once my son starting crawling, things only became worse: I’m not exaggerating when I say that as soon as I would step foot into the kitchen, he would crawl after me, grab my ankles, and start crying!
My family and I lived on frozen store bought foods that were easy to prepare- you know, the ones that were precooked and all you had to do was take the food (i.e chicken wings and chicken nuggets) out of the package and bake- yup, total lifesavers! Now, I know these types of foods are not healthy, but when you have a child like my third, you will do anything, I mean anything, to survive! And whenever I did cook a meal, I made sure to cook enough food that we had leftovers for the next day…or two.
Even cooking for my guests became overwhelming and stressful; and I avoided get-together’s at my place for the sake of my sanity; I mean, cleaning the house while sleep deprived, AND cooking a meal while carrying a fussy baby AND taking care of your other two children is not easy folks!
So, what about today? Now, my children are 8, 5, and 3 years old, and I can FINALLY say that things are starting to get better…It’s been a few months since I have started to cook fresh and healthy meals for my family again- with all that said though, I’m due to have my fourth child in a couple of months, so I’m not sure how long this will last for…however, this time I’m preparing myself by making my own healthy meals to freeze ahead of time!
